Ingredients

Mascarpone Mousse:


100 g (3.52 oz ) mascarpone
100 g (3.52 oz ) cream
105 g (3.70 oz ) sugar
10 g (0.35 oz ) Pastry 1 SIlver Gelatin sheet
700 g (24.69 oz ) whipped cream

 

Vanilla Creme Brûlée Insert:


700 g (24,69 oz ) heavy cream
1 Gahara Vanilla Bean
120 g (4.23 oz ) Pastry 1 Creme Brûlée mix
5 g (0.17 oz ) Pastry 1 Silver Gelatin sheet

 

Coffee Sponge :


250 g (8.81 oz) egg yolks
188 g (6.63 oz ) 10X sugar
180 g (6.63 oz) Pastry 1 Almond Flour
50 g (1.76 oz) AP flour
165 g (5.75 oz) egg whites
25 g (.88 oz) sugar
40 g (1.41 oz) Maison de Choix Grape Seed Oil
100 g (3.52 oz) simple syrup
40 g (1.41 oz) Kalhua Liquor

 

Coffee Caramel:


50 g (1.76 oz) sugar
30 g (1.05 oz) Pastry 1 Glucose Syrup
70 g (2.47 oz ) coffee
20 g (0.70 oz) Beurremont 83% Butter
1 g (.03 oz) salt
2 g (.07 oz) Pastry 1 Silver Gelatin Sheet

 

Chocolate Glaze:


200 g (7.05 oz) Cacao Noel 61% Couverture
20 g (0.70 oz) Maison de Choix Grape Seed Oil

 

Mango Passion Gel:


280 g (9.87 oz) Ravifruit Mango Purée
80 g (2.82 oz) Ravifruit Passion Fruit Purée
0.8 g (0.02 oz) Cuisine-Tech Agar Agar

Directions

Mascarpone Mousse  Melt sugar and gelatin in the cream, temper with the mascarpone, fold in the whipped cream.

 

Vanilla Creme Brûlée Insert:  Combine ingredients, boil, pour into molds and allow to set.


Coffee Sponge :  Combine the dry ingredients, add yolks and fold in the egg whites which have been
whipped with the sugar then oil. Bake at 160˚C / 320˚ F for about 6 minutes. Combine syrup and Kalhua and brush the sponge with it.


Coffee Caramel:  Heat the sugar and glucose until it reached a caramel stage. Deglaze with coffee, add salt butter and gelatin, blend.

 

Chocolate Glaze:  Temper the chocolate with the oil in it. Use at 31˚C/ 88˚F.


Mango Passion Gel:  Combine all the ingredients and bring to a boil, allow to set. Blend and strain.
