Quick Overview
Il Fornaio mean’s “the baker” in Italian. We began as a baking school outside of Milan, Italy in 1972, in response to the disappearing art of centuries-old Italian baking. In 1981, Il Fornaio came to the United States and has since grown to include some of the most successful restaurants and bakeries in America.
From simple ingredients of flour, water, yeast and salt come an infinite variety of Italian baking traditions. Il Fornaio breads begin with a “biga” (starter dough) and are baked daily according to centuries-old methods. These cultural traditions are at the very heart of Il Fornaio, and their preservation is an integral part of Il Fornaio’s mission to provide customers with the most authentic Italian experience outside of Italy.
