Nocciolo is produced by Caseificio dell’Alta Langa, based in northern Italy’s Piedmont region. Made from a mix of cow, goat and sheep milk, this two-inch-tall cheese weighs about six ounces. It has no rind and a smooth top. It is buttery rich, with the texture of cheesecake and a clear goat cheese tang.
